| Liqueur/Schnapps – Specific Gravity Tables For preparations of multi-layered Pousse Cafes with the use of cordials, herbals, brandies, and syrups. Gravity, Viscosity, and Density are all terms used to describe the thickness levels of these liquid spirits. To measure a liqueurs’ specific gravity, either at home or in the bar you currently work in, go to your nearest scientific supply outlet and ask for a Hydrometer; a sealed graduated tube, weighted at one end, that sinks in the given fluid to a depth used as a measure of the fluid’s specific gravity. Ask for a hydrometer that’s calibrated between 1.00 – 1.22. You will also need to purchase a 250ml graduated cylinder. These tools are fairly inexpensive – about $15 each, and glass, so they’re delicate to use. Pousse-Café is French for “After Coffee”. NOTE: Specific gravities/densities will vary slightly from one brand to another. Most Pousse-Café drinks consist of three to six layers. Preparation Key Pousse-Cafe’s are made by pouring liquids in order of density – from heavy to light –so they remain in distinct bands within the glass. To layer a drink, pour the densest ingredient into the designated glass (shot, martini, pony or pousse glass). Using a bar spoon or cherry, pour each subsequent liquid very slowly over the back of the bar spoon/cherry held just above the previous layer and/or set against the inside of the glass, so it cascades gently on top. If liqueurs are previously chilled (cold in temperature), it will create a stronger and longer lasting separation, and may be more appealing to the palate. One thing to always keep in mind, is the more sugar content (less alcohol) in a given liqueur, the heavier it tends to be. The more alcohol content (less sugar) in a given liqueur, the lighter in weight it is. The Higher the proof, the Thinner the liqueur. The Lower the proof, the Thicker the liqueur.
